Manitou Springs, Colorado – In this week’s restaurant report card, a small piece of Louisiana is in Manitou Springs, called the Rocky Mountain Baynet.

A retired teacher is bringing big easy treats to the Pikes Peak area, turning her dreams into reality.

They are pronounced “ben-yays”.

“I often see people who don’t know what a beignet is. They don’t know how to pronounce the word, but they’re curious so they go inside and love them,” said Rocky Mountain Baynet. The owner, Branditism, said.

If you’ve been to New Orleans, you may have heard of it.

“Beignet is a French donut,” Chism said.

They are small pillows of powdered sugar blankets that are fully inflated.

“Everyone loves donuts, but they aren’t that thick. They’re fluffy, a little airy, and don’t like powdered sugar,” Chism said.

Now you don’t have to travel to the French Quarter to find the real thing.

Chism said: “My husband and I have always dreamed of living here. I was a school teacher in Louisiana for 20 years and retired and said,” I think it’s time, “so I moved to Colorado. rice field. “

Thankfully, they brought a small house.

“It took us a while to get the recipe right because we are at a very high altitude,” Chism said.

Once the recipe was complete, Rocky Mountain Baynet started in 2019.

“Our business started out as a Woodland Park food truck,” said Chism.

In June, they moved to a physical store on 724 Manitou Avenue, turning Beignet into a blessing.

“I was finally able to make that dream come true,” Chism said.

Rocky Mountain Beignets is open Monday to Thursday from 8 AM to 7 PM and Friday to Sunday from 7 AM to 8 PM.
