What should I do with the mashed potatoes left after Thanksgiving? How about a potato cake donut hole! From children to adults, these will satisfy the sweet teeth of the holidays.
- 1¾ cup of flour
- ½ cup of sugar
- ½ tbsp baking soda
- 1 teaspoon salt
- 3/4 cup cocoa powder
- 2 tablespoons yogurt
- 1.5 tbsp vanilla essence
- ¼ cup of cold mashed potatoes
- 1 cup of milk
- 2 tablespoons butter
- 2 big eggs
Stand mixer with paddle attachment (See note below)Mix the butter and flour at room temperature until coarse and cornmeal-like. Add potatoes and sugar. Once mixed, mix the remaining ingredients until a smooth dough.
I’m using a small 2 ounce. With a scoop or spoon, drop the dough into hot oil (360 degrees). Fry both sides for 20 seconds and transfer to a towel-lined pan to absorb excess fat.
- 2 tablespoons of strawberry milk
- 2 cups of powdered sugar
- A few drops of red food coloring
Mix the milk and powdered sugar together in a whisk and add the food coloring.
When the holes in the chocolate donut have cooled, drop it into a bowl of glaze and roll it. Move them to a cooling rack and sprinkle them before the frosting hardens.
Note – If you do not have a stand mixer, mix the dry and damp ingredients separately with a whisk and then mix by hand.
