Lexington, Kentucky (LEX 18) — By late 2024, the Palomar Fountain welcomes its largest tenant, Publix.

Florida-based grocery chain Announced on Thursday Open the first place in Lexington. The location will be the third in Kentucky, following two stores in Louisville that will open in 2023.

“I’ll be the first to line up to get that’pub sub’,” said Carson Kirby, who was dining with a friend at Papi’s Mexican restaurant at Palomar Shopping Center on Thursday.

Kirby mentioned a specialty public sandwich that is popular in the southern United States.

“The subway is like the second layer of the pub sub,” Kirby said. “I don’t know what it is, but I think it’s like freshness and flavor. It’s just different. It’s not a regular sandwich.”

Kirby’s mom lives in Florida, so she’s familiar with the store.

“It definitely seems to be a cult favorite,” Kirby said.

But her friend has never set foot on Publix.

“I may have to go to Florida to try it,” Carson Stannifer joked. “I don’t know why everyone is so upset, but I need to understand that.”

Stanifer said the hype around Publix reminds me of when Buc-ee opened in Richmond.

“Everyone in Richmond went to Buc-ee’s,” Stanifer said. “You will be asked if you went to Buc-ee’s.”

While Kirby and Stanifer were enjoying Margarita outside, Marcos Valdes was inside and was fascinated by the news that Publics would soon become his neighbor.

“There will be more people coming and going,” Valdes said. “And that would hopefully mean more business for us.”

Valdes is the owner of Papi’s Mexican Restaurant. He opened a third location in the Palomar fountain about 15 months ago, where he became one of the first tenants. He heard about Publix’s announcement Thursday morning.

“I said [to our staff]“We need to hold a meeting and see how we can use it,” says Valdes. “I don’t have an idea yet, but I sit down, think, and brainstorm.”
