However, due to global supply shortages, maple syrup faucets are depleted.
Canada Producing nearly 80% of the world’s maple syrup, the Federation of Quebec Maple Syrup Producers is now taking drastic steps to keep the supply chain flowing by immersing itself in emergency supplies.
So why is production declining by 24% now?
From Kentucky to here in northeastern Ohio, to Canada, sugar makers say Mother Nature wasn’t that sweet this year. They say that the featureless spring season leaves little to work with many maple syrup makers.
“It was either too warm where it was below freezing, or too cold where it was below freezing. And we couldn’t get much because of snow and rain. It was on the ground for most of the season. It was one of the first seasons when it didn’t snow. “

In normal years, he was preparing to sell syrup at maple festivals, local markets, and holiday-related events.
But this is all the rest of his supply.
“Behind here, there are five mini-drums left. That’s my spare and the rest of the drums. Usually I have 15-20 15-gallon barrels.”
Producers of maple syrup in Quebec will release reserves of about £ 50 million, which is about half of their stockpiles. And so far, the United States is the largest purchaser of this product.
But for a small maple syrup maker like Tom Salo, getting supply from Canada is not an option given the current shipping delays.
He says the tapping season needs to start earlier than usual, perhaps early in January, to make up for the loss.
Salo adds, “Depending on the season you tap, when you pull the tap, everything is 100% Mother Nature and everything depends on the weather.”
