Colorado Springs — The demand for delicious Polish food prepared at Mika’s Pierogi Kitchen, which opened its first physical store in December 2020, has skyrocketed high enough for owners to move to larger spaces. Hire more staff, accommodate more customers and create more pierogi.
From the opening of the new Polish restaurant to February, co-owners and couples Dominika Mills and Zachary Short report that staff and food production have doubled. Now that number will increase even further.
“We knew the food would be popular, but we didn’t expect the amount we did,” Zachary commented in a February interview.
“It happened rapidly,” Dominica said in the same interview. “I think I like it. I’m thrown into the deep sea and quickly get busy, take on challenges and like to take it all at once.”
The dream of creating a restaurant using her family’s recipes has been a dream of Dominica for quite some time.
“We try to love food and hope it’s what these people are leaving,” she commented.
Opening in the midst of a pandemic certainly raised the bar, but both Dominica and Zachary also provided jobs to several people who were unemployed due to changes in all areas brought about by COVID. I saw the open as an opportunity to do.
With the opening of a new space near the Garden of the Gods, Pierogi Kitchen can offer five more jobs to the locals in Colorado Springs.
According to the owner, all efforts have been undertaken with the support of the Colorado Springs community.
The current plan is to continue to settle in their current location and make it more and more attractive.
Looking further, both Zachary and Dominica hope to open a second location to reach people in the Castle Rock area or east of Colorado Springs.
